Dietary & Allergen Information
Maple & Ash is committed to providing exceptional hospitality for guests with dietary preferences and restrictions. Below are official kitchen practices, allergy procedures, and modification options.
Important Kitchen Allergen Notice
Maple & Ash is NOT a certified allergen-free facility. Our open hearth kitchens actively store, prepare, and cook with major food allergens including shellfish (lobster, crab, shrimp, clams, scallops), dairy, tree nuts, peanuts, wheat/gluten, soy, and eggs.
Because dishes share live-fire hardwood hearths, grills, fryers, and prep surfaces, 100% elimination of cross-contact cannot be guaranteed. Guests with severe or life-threatening airborne allergies must exercise personal discretion.
How to Communicate Dietary Needs
When reserving via SevenRooms or Resy, specify all allergies and dietary restrictions in your reservation notes.
Reiterate your specific food allergies with your table captain and server upon seating before placing food orders.
For complex dietary restrictions or the IDGAF tasting menu, the culinary team can design personalized course substitutions.
Gluten-Friendly Dining
All wood-fired steaks, chops, and fire-roasted seafood dishes are naturally gluten-free when prepared without flour-thickened sauces or garlic bread backs. The Maple & Ash Wedge salad and Whipped Yukon Potatoes can be served without croutons.
Dairy & Lactose Preferences
Steaks and hearth seafood are traditionally finished with rich French butter. Upon request, steaks can be wood-grilled clean with pure olive oil, sea salt, and fresh herbs, omitting compound butters.
Vegetarian Options
While centered on prime beef and seafood, vegetarians can enjoy Ricotta Agnolotti, wood-roasted oyster mushrooms, heirloom tomato salads, Golden Beet & Burrata, and decadent cheese side dishes.
IDGAF Tasting Menu Modifications
The signature multi-course IDGAF tasting menu ($225) can be customized for guests with shellfish allergies, pescatarian diets, or red meat restrictions with 24 hours advance notice.
